Jubilee cookies

That is about as exciting as our weekend got. Saturday Ebi-kun had to go to the ENT doctor, he had the ENT test as school and they sent a letter home saying his ears were gunked up and he needed the form signing by a doctor to say he had them degunked and checked out before he is allowed to join the swimming class. Then is was the usual weekly shop and football class in the afternoon. 

Sunday we just pottered around, set up our 'green curtain' using goya plants, hopefully it will keep the living room a bit cooler this summer. Ebi-kun and I made some cookies, the recipe I used was more like shortbread and not really suitable. When we have made cookies to decorate with icing in the past we have used a standard sugar cookie dough but no one really likes it. The cookies look great but don't get eaten! If anyone has a cookie recipe that will allow rolling and cutting out with shapes that is not overly sweet, please share.

Hope those of you in the UK are enjoying your long weekend, for the rest of us...it is back to work...

  1. A not so sweet, delicious (but rather pricy if you go the maple route) recipe:
    150g flour, 1tsp baking powder, (150g nuts, raisins, chocolate etc. if wanted. I never do), 50cc maple syrup (or 1/4 cp jam worked well), 3Tbsp or so of sugar (or not. Whatever), 80cc canola and a splash of milk/soymilk (if any vegans are reading this!) and a pinch of salt.
    Tip all in bowl, mix, shape, bake at 180C for 25 mins or so. Devour.

  3. this is the cookie recipe that I use (and won't us any other.) I know that Americans typically eat too much sugar, so I'm not sure how it will suit your taste buds.
