Snack Time - Anzac biscuits

I didn't manage to get photos in the making process this time but we did it very much like the peanut butter granola balls where Babyebi measured out the dry ingredients and I did the wet (hot) bits.
Dr Laura Markham loved the peanut butter balls so much she blogged about it on Your Parenting Solutions, lots of good info on her site too, have a look!

This is another recipe from the postcard swap and are also really good. Luckily my best mate bought a large tin of golden syrup with her when she visited from England so I was able to follow the recipe without having to change any of the ingredients (I have yet to find golden syrup in a store in Japan yet)

Anzac Biscuits - Australia
1 cup uncooked rolled oats
1 cup brown sugar - lightly packed
1 cup plain flour, wholemeal is OK
3/4 cup desicated coconut
125g butter
2 tbsp golden syrup
1 tbsp baking soda (bicarb)
3 tbsp boiling water

  1. blend the oats, flour, sugar and coconut
  2. grease a baking sheet
  3. melt butter and golden syrup over low heat, when melted remove from heat
  4. dissolve baking soda into boiling water, this went all fizzy and Babyebi loved it!
  5. add baking soda water to the butter syrup mix
  6. stir the wet into the dry
  7. drop tablespoons of mix on the the baking sheet, allow room for spreading
  8. bake at 150 deg c in fan assisted oven for 10 - 12 minutes, leave to cool for 5 minutes
  9. eat and enjoy!



I have seen muffin tin Monday pop up all over blogland recently and wondered what all the fuss was about. Well Saturday we came in later than I anticipated and I hadn't got anything organised for dinner, so I through together a muffin tin dinner, basically get a muffin tin and fill each hole with a different kind of food making sure you get a good balanced diet in there. BabyEbi loved it and asked for a muffin tin dinner again the next day, now I know what all the fuss is about!

  1. The Anzac biscuits look great! Unfortunately my kid is allergic to nuts, including coconut, so I'd have to think up something to substitute for that bit - maybe just more rolled oats!

    I have LOTS of golden syrup as I mistakenly ordered a case of the stuff instead of a tin of it from FBC last Christmas. It's amazing how fast it's going down though, and it turns out it's great for presents as lots of my Japanese friends love the taste, too. So it didn't turn out that big of a mistake after all, though I am always on the lookout for Golden Syrup recipies!

  3. I'm glad they were a success! We *love* them here - I made some with Spelt flour recently and a bit less sugar and they were still delicious - must be all of that butter ;)
    I'm sure you could make them without coconut, too.

  4. Oh this reminds me of when my children were little. Muffin tin meals were their absolute FAVE! They used to beg for them.
