A trip down memory lane...

When I was 15 years old I had several pen friends from around the world. My friend Shez and I were pen pals with two friends in Norway and they invited us over to visit. We saved up the money and off we went for two weeks, it was my first big travel adventure and only the second time I had been out of the UK, first time was a school skiing trip to France when I was 10.
Norway is incredibly beautiful, our friends lived about 3 hours drive from Oslo, they took us out and about to museums and the such like and we spent a few days up in the mountains at 'the hut'. 



This still makes me laugh to the day, the 'hut' was bigger than my home and could sleep 16 people, all in their own beds and the dining table was like something from a fairy tale! The hut was in the mountains right next to a lake, it was absolutely stunning, we spent some lovely lazy days there. The photo below was taken outside the ski hut, the one used only in the winter, basically a one roomed hut!


Of course, you can't visit a new country without falling in love with some of the food, I fell for the cheese and delicious beetroot salad, when we got home we tried to recreate it but never pulled it off. I think the missing ingredient was sour cream - thank you Mr Google! I tried it with some of the beetroot I got off Heather, lovely! Bit too much sauce but delicious all the same and such a lovely colour.


I didn't actually measure it but it was basically equal parts of sour cream, mayo and plain yoghurt and a dash of lemon juice. I still have no idea how the beetroot salad that we ate in Norway was made, if you happen to know, please share! It is such a long time ago, I'm not even sure if this tasted like it or not!

  1. Those are beautiful memories! I add a bit of beetroot to potato salad. It tastes yummy!
